  • 1 small onion (2.8 mg)
  • 1 small head of cauliflower (79.8 mg)
  • 4 medium Red or white potatoes (38.6 mg)
  • 1 cup nonfat milk with added Vitamin A (102.9 mg)
  • 2 tablespoon light sour cream (20.1 mg)
  • 2 tablespoons unbleached all-purpose flour (.312 mg)
  • 2 tablespoons unsalted butter (3.124 mg)
  • White pepper to taste (trace)
  • 4 slices Sargento Reduced Fat or lower sodium Swiss cheese (120 mg)*


Preheat oven to 350° F Lightly grease an 8 X 8-inch casserole dish Chop the onion

Remove stem and leaves from cauliflower and cut the flowerets into bite size pieces Peel potatoes and slice

Layer the ingredients into the casserole dish starting with half the potatoes, dot with 1 tablespoon of the butter, half the cauliflower, and half the onion. Then sprinkle desired amount of white pepper

Repeat for another layer ending with the butter and pepper Mix milk, sour cream and flour until smooth and pour over the potatoes and cauliflower. Layer the grated or sliced cheese on top

Place uncovered casserole in oven and bake for 45min. to 1 hour until bubbly and golden on top.

*Sargento Swiss slices weigh about .7 to .8 ounces per slice. These slices vary from 30 to 35 mg sodium. The USDA lists a "low sodium" Swiss with 3.3 mg sodium per ounce, but we've never found a low sodium or salt-free Swiss to list or test.
