You can double this waffle recipe or triple it, etc. Works for Belgian waffle makers or the standard round waffle-maker. The nutrient values are for one single waffle in either machine, using either two thick or four thinner slices of homemade, salt free bread. Now, don't inhale too deeply, we know that waffle batter contains a variety of high sodium ingredients from baking soda to baking powder and of course gobs of salt. A standard waffle can contain as many as 1,000 mg of sodium with commercial (restaurant) waffles being even higher. The calories in many waffles come from sugar, flour and what we put on top, such as syrup, powdered sugar or even sour cream.

  • 2 standard size slices of homemade bread¹ (11.3 mg)
  • 1 large egg, whisked with milk (70 mg)
  • 1 tablespoon half and half or nonfat milk (6.15 mg)
  • Ground cinnamon to taste (.078 mg)

Preheat waffle iron. If iron is nonstick you will not need to oil it. If you must oil it, do so with a can of spray olive oil or canola oil.

Sprinkle cinnamon on sliced bread.²

Whisk egg with nonfat milk or half & half in a flat bowl where you can lay your sliced bread evenly.

When iron Is hot, lay bread onto whisked egg and milk mix and then turn over. When well over, place on half of the iron. So the same with the second slice.

Close waffle maker, sealing it as tightly as possible and wait for "green light."

When waffle is cooked remove and serve as you usually would. It will amaze you.

¹ Enough to cover most of the waffle iron but not fully. If using our 100% whole wheat bread, circa 2016, sodium levels per slice will be about 3.5 mg.
