Luncheon Sandwich More than 3 Carb Choices
These make great party or picnic sandwiches. You can use whatever filling you prefer, but this recipe calls for pesto (tomato or basil), chicken, turkey, beef or pork, low sodium cheese and Ortego green chilies. You can cut these to 1" thickness for parties or sandwich length for picnics or to store in your refrigerator or freezer for lunch during the week. Note: Sodium levels figured for highest values per ingredient.

- 1 Classic French Bread Recipe (19.8 mg)
- 2 tablespoons olive oil* (trace)
- 1 recipe Don's Basil Pesto or 6 tablespoons tomato pesto without salt or parmesan cheese** (16.5 mg)
- 8 ounces thinly sliced meat of choice (155 mg)
- 6 ounces low-sodium Tillamook Cheddar or Alpine Lace Swiss (330 mg)
Pre heat oven to 400° F.
Make Classic French Bread dough, split in half. Roll first half out with rolling pin until thin.
Spread half of the meat and other ingredients on the dough, beginning by brushing with olive oil.
Lay down the pesto, then the meat and cheese. Roll tightly length wise to form a log. Set on lightly greased baking sheet or in French bread pan.
Roll out second half and do the same.
For Party Sandwiches:
Bake at 400° F for 15 to 20 minutes, or until golden brown. If using convection oven, bake at 375° F. Note: Ovens vary. If it takes longer than 20 minutes, then next time, set oven to 425o F.
When done, let cool on rack.
Slice diagonally in 1" to 1 1/2" widths. For picnic or sandwiches to store for future use, sliced in 4" to 5" lengths. May freeze or refrigerate in zip locked bags.
For Luncheon Sandwiches:
Let rise for 10 minutes in a room temperature area.
Then bake as above.
Note: To cut calories and fat leave out the olive oil.
** If you can't find without salt or parmesan, such as Trader Joe's is, then add the difference listed on the jar.
