When a visitor to Megaheart asked for cracker recipes I had to pull some old family recipes out of the archives and figure out how to make crackers without salt, baking powder/soda and without a ton and a half of butter or oil. Dry soda crackers are not going to be our biggest bet for crackers without salt or real baking powder quite yet — but these "party" crackers will suffice until then. Follow the instructions about rolling them out and you'll get some really good crackers as your reward. The first batch will sure as heck teach you how to do the next three in this recipe of four batches. Once you get the hang of it, you'll have crackers available all the time.

BAKERS TIP:
If your first batch is "thicker" than we want, just reheat or toast in a toaster oven before serving. This will help crisp the cracker more.

Ingredients
  • 4 cups white unbleached flour (10 mg)
  • 1 tablespoon Ener-G Baking Soda* (0 mg)
  • 1 teaspoon Featherweight Baking Powder (4.5 mg)
  • 2 tablespoons poppy seeds** (3.696 mg)
  • 2 tablespoons onion flakes (2.1 mg)
  • 1 teaspoon vanilla (.126 mg)
  • 3/4 cup unsalted butter (18.7 mg)
  • 1 tablespoon apple cider vinegar (.15 mg)
  • 1 1/3 cups nonfat milk**** (169.8 mg)
  • Optional: 1 teaspoon black pepper (.924 mg)

    Preheat oven to 400° F.

    In a medium size mixing bowl, stir together the flour, Ener-G Baking Soda, Featherweight Baking Powder, powdered vanilla poppy seeds and onion flakes.

    Soften the unsalted butter. Cut it into the flour with a knife or fork. Add the vinegar

    Add in the nonfat milk and cut in with a fork or knife. Slowly add the milk while you mix with a fork or wooden spoon. At the end, you'll have to work with your hands in the batter. Don't overwork the batter. Form a ball of dough with your hands and cut or break into four pieces.

    On a floured breadboard, roll the first ball out very very thin. You want as thin as you can get. Push down hard on your rolling pin. Cut with 2" to 2 " cookie cutter and place on lightly greased cookie sheet. (May also make oval or square crackers with this recipe.) Prick with a fork 4-5 times, through the top down into the metal of the sheet. Don't forget this step. It's important. You should be able to get 15 to 18 crackers on a baking sheet.

    Bake on middle rack at 400° F for about 6 - 9 minutes. (The thinness of the cracker will determine the time. The tops will start to brown.) Turn and bake for another 3 to 5 minutes. Keep an eye on them so they don't burn on you. Some ovens are hotter than others.

    Cool on rack. Serve with soups, salads or at parties just as you would regular salty crackers.

    *If you want a "fatter" cookie, replace the Ener-G with Featherweight in equal amount.

    **May replace poppy seeds with caraway seeds or minced garlic or other flavors you like in crackers.

    ***Zero carb choices for one cracker. 1 Carb Choices for 2 or 3 crackers.

    ****If you want to cut most of the sodium out of this recipe, exchange the nonfat milk with bottled distilled water.
