Ingredients

  • 2 1/2 cups white unbleached all-purpose flour (6.25 mg)
  • 1 tablespoon Ener-G Baking Powder (trace)
  • 1 cup sugar or 1/2 cup SplendaŽ Blend for Baking (trace)
  • 3/4 teaspoon cream of tarter (trace)
  • 1 tablespoon poppy seeds (1.764 mg)
  • 1 cup dry roasted unsalted whole almonds (1.57 mg)
  • 2 large eggs (126 mg)
  • 2 large egg whites (109. 6 mg)
  • 1 tablespoon cider vinegar (.15 mg)
  • 2 tablespoons almond extract (2.34 mg) After Baking

  • 1 package (12-oounces) Nestle's or favorite semi-sweet chocolate chips, melted in double boiler (37.4 mg)**
Directions

Preheat oven to 325° F. Lightly spray oil on two large baking sheets. Set one aside. You'll do your initial baking with just one sheet.

Sift flour with the baking powder, Splenda or sugar, and cream of tartar into a medium bowl. Stir in the poppy seeds and almonds, and set aside.

In a large bowl, using a wooden spoon, stir together the eggs, egg whites, vinegar, and almond extract.

Using a wooden spoon, stir the wet mix into the dry mix quidkly and thoroughly. The Featherweight must be mixed with wet quickly, then shaped and into the oven with a minute or so.

As rapidly as possible, move batter to baking sheet and form into an approximate
1/2" x 6" x 14" rectangle. Bake at 325° F for about 25 minutes. Test with toothpick or knife to make sure it's cooked. After cooling about 5 minutes, slice thin at about 1/4" up to 3/8" thick on a 20° diaganol. You're trying to get 40 cookies out of this. You will slice about 20 6" long cookies that you'll then cut in half to make 3" long. After slicing you'll bake again. See next paragraph.

Lay slices on their sides, on two separate baking sheets. Return to oven and bake on each side for 8 tminutes each, at 325° F. Cool on racks.

While cookies are baking on their sides, melt a 12-ounce package (approximately 2-cups of semi-sweet chocolate chips in a double boiler pan. Keep the pan over the double-boiler hot water to keep chocolate from setting. Dip finished cookie bottoms into chocolate and let cool by setting on clean side on rack or wax paper. Will take up to two hours to harden. Very tasty cookies.

*Depends on thickness of cookie.

**Most of the carbohydrates are in the chocolate chips. These cookies are tasty without the chocolate if you want to cut the carbs down. Without the chocolate, each cookie has only 6.934 grams of carbohydrates
