Chef Don's Easy Barbecued Whole Chicken

Works with charcoal or gas barbecues. This is a relatively easy way to barbecue a whole chicken. You'll find this style of cooking chicken in one or two other recipes in this book, but this one has a hotter marinade and can be barbecue in a pan or on the grill.

Ingredients The Chicken
Clean chicken. Slice skin only, twice on left half breast, twice on right half breast. Make one slice on thigh and one on leg. Cover tips of wings with foil. (That will help prevent blacked wing tips.)

The Marinade
Whisk rice vinegar, minced garlic and Don's Tomato Based Barbecue Sauce in large bowl. Turn chicken in marinade to fully coat it. Leave chicken in bowl breast side down. Cover with plastic wrap and let sit in refrigerator one or two hours (or overnight).

Barbecuing The Chicken
Remove chicken from bowl. Pat dry (we use paper towels.) Discard the marinade. Lift the skin where you've sliced it and sprinkle the spices directly on the meat, Then return skin. If the skin rips or tears too far, use small skewers to hold it in place while barbecuing.

Set your barbecue for convection cooking.

First, braise chicken directly over the flame skin-side down, (right breast first, then left breast), for about three to four minutes.

Then set chicken breast side up in the oiled aluminum, or, if not using pan, set over the open area of the grill. Close the lid of the barbecue grill, and continue cooking. Baste every ten minutes. Cook with thermometer. You want 165° F to 170° F. You can easily convert Fahrenheit temperatures to Celsius by clicking here.

Cook until meat is not pink at the bone and the juices run clear, about 45 minutes to an hour.
