Bread Machine Preparation
Can also be done kneading with hands.
Makes 24 Dinner Rolls or 16 to 18 Sandwich / Burger Buns
- 1½ cups plus 1 to 2-tablespoons1 warm nonfat milk with vitamin A&D (90° F to 105° F) (164.6 mg)
- 1 large egg (70 mg)
- 4 tablespoons unsalted butter, soft (6.248 mg)
- 1 tablespoon cider vinegar (.745 mg)
- 1 teaspoon vanilla extract (.378 mg)
- ½ teaspoon ascorbic acid (trace)
- ½ teaspoon granulated onion powder (.876 mg)
- 1 tablespoon vital wheat gluten (2.598 mg)
- 2 tablespoons potato flour (12.5 mg)
- 2 tablespoons white granulated sugar (.252 mg)
- 4 cups bread flour (10 mg)
- 1 tablespoon Bread Machine Yeast - (8.16 mg)
- 1 large egg, beaten with 2 tablespoons of filtered water (70 mg)
Place all ingredients into your bread machine and set for dough. After first rise, remove to lightly floured bread board. Make sure you remove the dough after the machine's first rise. Most machines punch down the dough and do a second rise. We need to use the second rise for this recipe.
On the bread board, press down on the dough (hopefully it's a bit sticky). Shape into rectangle while you press down. Don't use a rolling pin.
Sliced dough into to sections.
For Dinner rolls carve out 24 pieces and pinch sides and corners down to make a ball. Place in pre-oiled and lightly floured aluminum or standard baking pan evenly. Should fit a 10 x 12 pan with 12 balls. After balls are made baste with egg and water mixture.
Cover with iight cloth (floured) and let stand in a warm area for one-hour or until rolls rise to top of pan. Or preheat oven to about 90° F and let rise there uncovered but with oven door closed. We preheat about an hour before usng oven. We have found that if we turn oven on at 200° F for 45-secons, then turn it off and leave door closed that you'll have a perfect temperature for the rolls to rise.
If you rise in oven, then just leave the door shut when ready to bake. Turn oven on to 375° F and bake for about 20 to 25 minutes or until golden brown.
If you rise outside the oven, then preheat oven to 375° F and when ready, carefully place the pan with rolls onto rack that is one level below the middle of the oven and bake for about 18 to 22 minutes or until golden brown.
When baked, place rolls in pan on a cooling rack and cover with very light cloth for about an hour. Serve warm or store in zipper lock bags and reheat in microwave (high) for about 15 seconds.

²Xanthum Gum helps bread bake up with more spring. You'll find that your bread will stay moist longer without being "wet" and your bread won't collapse in the center during the final minutes of baking and cooling. You may also add some guar gum (about ½ teaspoon) to help with the "thickening" process. However, we have found with this recipe that it is not needed.
