Before heart failure I had a large piece of property I cared for in my "spare" time. I owned 3 weed-eaters - each one different for a specific type of weed. The grass would fly along with the bushes, brush and weeds. Piles of this stuff would be stacked for hauling away. After about twenty years of this, my wife started showing up at home with these small plastic bags of pre-washed salad makings. We used to buy lettuce, now we were getting all this weird looking stuff that reminded me of what I weeded every week. But looks aren't everything as they say. Softer greens with a mixed variety of various names and appearances from stringy to purple arrived at my dinner each night. The bags had names like "Palm Beach," "Pacific Paradise," etc. At first it was tough to dive into it. I joked "What's this? A weed-eater salad?" Well, here it is for you, too. Why should I be the only one to enjoy this delicious treat.

  • 3 cups of mixed greens for salad (41.9 mg)
  • 2 tablespoons raspberry vinegar (.3 mg)
  • 1 tablespoon extra virgin olive oil (trace)
  • teaspoon white granulated sugar (or to taste) (.021 mg)
  • California Avocado (or whole if small), sliced¹ (20.8 mg)

Don't trust the pre-wash in the salad mix bag. Wash it again and spin dry it.

Wash the avocado skin, peel the avocado and slice it length wise getting about 4 to 5 slices per quarter.

Combine the vinegar, oil and sugar and dribble over the mixed greens. Toss the salad. Chill or serve immediately.
