Walnut Raisin Whole Wheat Bread
Bread Machine Recipe
Adaptable for Diabetics*


I find bread like this one while traveling. I always wonder why our local bakeries don't have the same breads that "tourist trap" areas do. This is a terrific flavor with a bread. Diabetics will have to leave out the raisins if the sugar count is too high. Baker's Note: Some bread recipes using whole-wheat and fruit might "collapse" on the top after baking. The bread will still be good. To fix the problem next time, assuming you use the same brand of flour, cut the water by about 2 tablespoons.

Ingredients



  • 1 1/2 cups orange juice with calcium (about 90° F to 100° F) (4.023 mg)
  • 1 tablespoon cider vinegar (.15 mg)
  • 1 tablespoon olive oil (room temperature) (trace)
  • 2 cups white unbleached bread machine flour (5 mg)
  • 2 cups whole-wheat flour (12 mg)
  • 1 level tablespoon vital wheat gluten (2.25 mg)
  • 1/2 ripe medium size banana, sliced (.59 mg)
  • 2 tablespoons white granulated sugar (or Splenda substitute)* (.252 mg)
  • 1 tablespoon bread machine yeast (6 mg)
  • 3/4 cup Sun Maid Baking Raisins (1 6 ounce package)
  • 1/4 cup golden seedless raisins (4.95 mg)
  • 1/2 cup unsalted walnuts, chopped in processor (.8 mg)

    Place orange juice in your bread machine. Put ingredients into machine in order listed. Hold raisins and walnuts for "raising buzzer." Set machine for white bread, 2 pound loaf or medium crust. I recommend the Breadman TR810 machine for this recipe If your machine chooses bake time by loaf size or weight, choose 2 pound size or a 3 hr 30 minute cycle. Serve with dinner, for sandwiches or as a crispy toast in the morning, topped with your favorite jam.

    *If you want to cut sugars to zero, exchange orange juice for bottled water, use Splenda instead of sugar and leave out the raisins. Add another 1/4 cup unsalted chopped walnuts and maybe some caraway seeds to flavor this if you do. You may also replace raisins with chopped dates.
