Use fresh basil for this sandwich and use our favorite Panini Sandwich Bread. Other bread that will work will include baguettes, sourdough, and most of our bun recipes.

Makes 2 Sandwiches
  • 2 Panini Sandwich Bread buns (small) (22.02 mg)
  • 4 tablespoons pesto (.902 mg)
  • 2 ounces no-salt low sodium Swiss cheese (7.84 mg)
  • 4 thin slices fresh tomato (4 mg)
  • 2 thin slices (2 ounces each) cooked chicken or turkey breast meat (76.7 mg)
Prepare pesto and keep in airtight container in refrigerator. Will store for up to three days for use if kept sealed after each use.

Cook skinless, boneless chicken half-breast by grilling on nonstick surface. Slice thinly.

Preheat the panini maker.

If using a nonstick grill, griddle or pan, warm over low flame until just before you're ready to heat the sandwich. Then turn heat up to medium high. If making your panini this way, press down hard on it with a pancake turner (spatula) for about three minutes or until bread is toasted, then turn over and press down hard again for about another three minutes.

Defrost the bread if frozen in a microwave on defrost setting, or use fresh bread. Slice for sandwich use.

Place low sodium Swiss cheese on top bun of each sandwich. Toast lightly under broiler for a few minutes to start cheese melting.*

Spread pesto on bottom half of sandwich bread. Lay chicken on top of pesto, layer the tomato slices and then close the sandwich.

If using a panini maker place both sandwiches on surface and bring the lid down. Cook for only three to four minutes or until bread is golden or crisp. You can raise a panini lid to check and return it to the sandwich if you need to.

* Preheated panini makers take about 3 to 4 minutes total time for the sandwich. If making a panini in a panini-maker, it may take too long to melt the cheese inside the sandwich so we recommend lightly toasting the cheese under a broiler for a few minutes to get the melting started. Pan, grill, or griddle surfaces might take longer to toast the panini sandwich.
