Low Calorie, Low Fat, Low Sodium Whole Wheat Bread
Can also be made sugar free. Bread Machine Knead, Oven Bake*

This whole wheat/white flour bread, created for a member of Megaheart who wrote asking for it, is just the ticket for both those who need or want lowered calories and also for those who need or want lowered sugar. You can replace the sugar in this recipe with an equal portion of Splenda (0 mg sodium, 0 Kcal).

Ingredients



  • 1 cups distilled (no sodium) water, warmed to about 110° F. (trace)
  • 2 cups white unbleached best for bread flour (5 mg)
  • 2 cups whole wheat flour (12 mg)
  • 2 level tablespoons vital wheat gluten (4.5 mg)
  • 2 level tablespoons white granulated sugar or Splenda (.252 mg)
  • 2 tablespoons flaxseed meal (trace)
  • 1 tablespoon cider vinegar (.15 mg)
  • 1 tablespoon extra virgin olive oil (trace)
  • 1 tablespoon grated orange or lemon peel (.18 mg)
  • 2 teaspoons bread machine yeast (4.8 mg)


  • This flexible recipe can be made different ways. Use the bread machine to knead or bake (cut in half for baking in machine), or knead by hand and bake in oven. You can make two long loaves or two standard loaves in 2 7" pans. The bread is tasty but you can add other flavors without harming the integrity of the recipe. To make standard loaves just let the machine do the kneading and let rise to the top of the machine. This may happen before the machine says it's done. Pay not attention to that. Remove the dough and form two loaves in two lightly greased 7" bread pans. Let rise in warm spot, covered with light cloth for 45 minutes to an hour. Bake in preheated oven at 425° F for about 20 to 24 minutes. Test for doneness. To make two long loaves in French Bread style, cut dough from machine in half, roll with hands, place in French Bread baking pan, let rise in warm spot for 45 minutes to and hour. Bake in preheated oven at 425° F for 23 to 24 minutes. Bread will remain fresh in tightly zipped bags for about 2 days, can be frozen for up to one month. *To make a bread machine loaf, just cut all ingredients except yeast in half. Use 1 teaspoons yeast for half this recipe. Set loaf at 1 lbs, medium crust. Don't attempt to make loaf in machine with this recipe, the doug will rise right out the top of the machine.
