Gingerbread Cookies
Also makes great "Gingerbread Man.

When we needed to come up with a gingerbread cookie, we asked Danny Boy's Cookies for help and sure enough, they came up with the best we've tasted.

Ingredients

  • 1/2 pound (2 sticks) unsalted butter (24.9 mg)
  • 1 cup white granulated sugar (2 mg)
  • 1 cup molasses (121.4 mg)
  • 2 tablespoons hot no sodium water (0 mg)
  • 1 teaspoon (heaping) Ener-G Baking Soda (0 mg)
  • 3 1/2 cups white unbleached all purpose flour (8.75 mg)
  • 1 heaping tablespoon ground ginger (2.104 mg)
  • 1 tablespoon ground cinnamon (2.149 mg)

    Cream the butter, sugar, molasses, hot water in a medium to large mixing bowl with your electric beater.

    Combine the baking soda, flour and spices in another bowl. Gradually stir this into the butter-molasses mixture using half or slower speed with your mixer.

    Divide in half into round balls and place in bowl to chill in your refrigerator overnight or for at least two hours.

    Preheat the oven to 350o F.

    Roll out the dough with a pin to about 1/4" to 3/8" thickness (no thinner) and cut out the gingerbread men (each ball should make 3 gingerbread men). If making cookies, use a drinking glass or cookie cutter to cut out 36 2" cookies. Please these on an ungreased cookie sheet.

    Bake at 350o F for 10 to 12 minutes (the less time the better). Cool on rack.

    If making cookies: dust with a pinch of sugar after they cook and are hot on the pan. Cool on rack.

    If making gingerbread "men" then cool for your children to make them into the characters they want. They can use frosting, M&Ms, miniature marshmallows, raisins or nuts.
