Vegan — 2 Carb Choices

I used to eat unsalted trail mixes by the bag. There were special time that that's all I ate. One such time was when I made a trip by horseback into the Sierra Nevada during a two-week stretch and all I took was a saddle bag full of homemade trail mix. This quick snack is based on that old recipe. Yu can leave out the dried fruits and the almonds if you like. The remaining ingredients would provide you "high energy" input with plenty of iron and potassium. Make a large batch and store in vacuum sealed jars. You can vacuum seal canning jars with a FoodSaver™ vacuum sealer. By the way, the horse I rode ended up "riding me." He went lame and I had to lead him through most of the trip. But it was easy. He follwed me without my having to hold his lead. I think he wanted the trail mix, too.

Makes 8 Cups

  • 1 cup packed golden raisins (19.8 mg)
  • 1 cup sweetened dried cranberries (3.6 mg)
  • 1 cup unsalted dry roasted chopped cashews (21.8 mg)
  • 1 cup packed black raisins (19.8 mg)
  • 1 cup unsalted peanuts (8.82 mg)

  • Any or All of the Below Acceptable:
  • Optional: 1 cup chopped dates rolled in confectioner's sugar* (3.56 mg)
  • Optional: ½ cup unsalted sliced almonds (8.52 mg)
  • Optional: 1/2 cup semi sweet chocolate chips (9.24 mg)
  • Optional: 1 cup dried fruit, mixed (apricots, apple, pear, citrus) chopped (26.4 mg)
Mix together and store in wide-mouth quart jars. Keep out a half cup for immediate use. A tight lid will hold this fresh in the refrigerator for a few months. You can also use a vacuum sealer like "FoodSaver." If you have children who would like this, and they aren't worried about sodium, you can add mini-marshmallows.

*Confectioner's sugar is optional. It's used to keep the dates from sticking to the other ingredients.
