Ingredients

  • 2/3 cup warmed unsweetened orange juice fortified with calcium (1.657 mg)
  • 1 teaspoon cream of tartar (1.56 mg)
  • 2 cups bread machine white unbleached flour (5 mg)
  • 1 1/2 teaspoons bread machine yeast (3 mg)
  • 2 tablespoons extra virgin olive oil (trace)
  • 4 tablespoons sesame seeds (12.8 mg)
  • 1 teaspoon olive oil for brushing, or use canned spray olive oil (trace)

    This mix makes a nice fluffy, soft dough to work with after it rises. You'll need two baking sheets, lightly sprayed with olive oil.

    Float the yeast on warmed orange juice (about 110° F), for about 5 minutes. Stir yeast in.

    In a medium size mixing bowl, sift together the flour and cream of tartar. Bring in the olive oil and yeast and mix together with a wood spoon. When well combined, roll out onto lightly floured bread board and hand knead for 8 to 10 minutes. When ready, press dough down on board to about six by eight inches. Brush or lightly spray with the olive oil and cover with light cloth or oiled plastic wrap. Set in a warm place for about an hour to double in size.

    Preheat your oven to 400° F. Spread the sesame seeds out on a dish or sheet to roll the sticks in. Cut the dough in half (3" x 4"), and then sliced 8 to 10 3" long pieces off each half. One by one, roll each piece in the sesame seeds, stretch them to about 10 to 12" and roll in seeds again if needed. Lay each piece well apart from each other on your lightly greased (oil spray) baking sheets. Cover with light cloth and let stand for about 10 minutes or so.

    Bake in oven at 400° F for 13 to 18 minutes. Remove to wire cooling rack when done. Enjoy!
